Yummmm!
Here is the recipe:
Beat 3 eggs on high speed of mixer for 5 minutes. Gradually beat in 1 cup of sugar. Stir in 2/3 cup pumpkin and 1 Tbsp lemon juice. Stir together 3/4 cup flour, 1 tsp baking powder, 2 tsp cinnamon, 1 tsp ginger, 1/2 tsp nutmeg, and 1/2 tsp salt. Fold into pumpkin, spread in greased, floured pan. Bake at 375 for 15 minutes. Turn out onto towel sprinkled with powdered sugar. Roll towel and cake together, cool. Filling: 1 cup powdered sugar, 6 oz. cream cheese, 4 Tbsp butter or margarine, 1/2 tsp vanilla. Beat smooth, spread over cool cake. Roll, wrap in tin foil and chill.
yum! that is one of my favorite holiday treats. except whenever i make it, okay i've only made it twice, but both times the cake cracked! so it looked awful but tasted great!

ReplyDeleteoh my goodness, this brings back nostalgic memories for me too! My mom also makes these around the holidays. I admit, it's easier for me just to have her make them for me hehe (I've tried a few times, but they don't come out pretty). yummy!
